Need a super simple way to feed the whole family in a jiffy? Try this super easy Gluten Free Bolognese Pasta Bake. It's so quick to put together and it will keep and taste fresh in your fridge for up to 5 days!

Ingredients

  • 2 cans diced tomatoes
  • 2 brown onions
  • 3 cloves of garlic
  • 1 kg minced meat
  • 2 carrots
  • 2 zichinni
  • 1 red capsicum
  • 1 green capsicum
  • 2 cups shell or tube gluten free pasta
  • 1 tablespoon dried thyme

Instructions

  1. Use a machine to combine and make a puree of the onions, carrots, zhuchinni and capsicums. They should look diced really finely. I do this the night before.
  2. Place a large stock pot on medium high heat and cook the minced meat with salt and pepper until brown. 
  3. Add the puree and stir to cook down. Once cooked, about 5 minutes, place on low heat and add the cans of diced tomatoes. Cook on low for about 20 mins.
  4. Meanwhile, cook your pasta according to the packet instructions. Drain and place aside.
  5. Grab a large oven tray and place the sauce then the pasta on top, combine all ingredients and stir.
  6. Heat oven at 180 degrees fan forced and sprinkle some mozzarella cheese on top. Place it in the oven for about 10 minutes.

Notes

*Use gluten free pasta.

*Use vegan cheese to make it dairy free.
